ingredients

• 1 Tom Yam noodle cooking set that contains :
– 100g Rice noodles
-95gTom Yam Soup Mix
-5g roasted chili paste
• 400 ml Water
• 2 leaves Kaffir lime leaves (optional)
• 2 slices Galangal (optional)
• 200g Prawns (deshelled,headless)
• 50g Mushrooms (quartered)
• 1 Lime ( in wedges)
• 1 handful of coriander leaves (optional)

STEP 1

Blanch the rice noodles in boiling water for 2 minutes. Drain the noodles and set aside in 2 serving bowls.

STEP 2

In a saucepan, boil 400ml of water and add the Tom Yam soup mix (and some optional herbs if you have: 2 kaffir limes leaves and 2 slices of galangal).

STEP 3

When boiling again, add the prawns and mushrooms until cooked through (also great with other proteins of your choice).

STEP 4

Ladle the broth with prawns and mushrooms on top of each bowl of noodles.

STEP 5

Garnish with the roasted chili paste and a sprinkle of coriander leaves (optional). Season to taste with a squeeze of lime or lemon juice.

Chef s Tip

This broth is packed with flavors and will take you to Thailand as is. But do not underestimate the toppings for soups : they elevate the dish to another level and make it even more yummy to the eyes… so worth the little extra effort !
