Stir-fry chicken cashew pineapple

ingredients

• 80g Pineapple (diced)
• 1 breast (about 230g) Chicken (diced/chunks)
• 120g (1 pack) BE Phad Thai sauce
• 2 cloves Garlic (chopped)
• 1 cup mix Bell peppers (diced)
• 1/4 onion Onion (diced)
• 60g Cashew nuts (roasted)
• 2 Tbsp VG oil
• 1 Tbsp BE Light soya sauce
• 1 tsp BE Fish sauce
• 1/2 Handful of Coriander leaves (optional for garnish)

Stir-fry chicken cashew pineapple

cooking steps

STEP 1

In a pan on high heat add the VG oil and fry the garlic until golden brown.

STEP 2

Add the chicken and stir-fry until golden brown.

STEP 3

When the chicken is cooked, add the diced onions.

STEP 4

Then, stir in the mixed bell peppers and stir fry for another minute.

STEP 5

Pour in the Phad Thai sauce with the fish sauce and light soya sauce and stir until well combined.

STEP 6

Add in the fresh pineapple and the cashew and stir for another 2 minutes.

STEP 7

Serve hot with Jasmine rice and garnished with coriander leaves .

This recipe will always work great with prawns or deep fried tofu !
