STUFFING
  • BE yellow curry paste 35g.
  • Beef 120g.
  • Sweet potato 1/2 head.
  • Onion 1/2 head.
  • VG oil 1 1/2 Tbps.
  • Spring onions 2 stem.
  • Salt 1/2 tsp.
  • Sugar 1/2 tsp.
  • Puffs pastry
  • Egg yolk 1 ea.
  • Water 2 Tbps.
A-JAAD DIPPING SAUCE
  • Vinegar 6 Tbsp.
  • Sugar 6 Tbsp.
  • Salt 1 1/2 tsp.
  • Cucumber 1 1/2 head.
  • Shallot 6 pcs.
  • Water 1 1/2 Tbps.
  • Chili 2 pcs.

How to cook Yellow Curry Beef Curry Puff

Follow these easy steps to bring authentic Thai flavors to your dishes.

  • STEP 1
    • In a wok on a medium heat: add vegetable oil, chopped onions and the Blue Elephant Yellow curry paste. Stir fry until aroma develops.
  • STEP 2
    • Add in the minced beef, diced sweet potatoes and season with sugar, soy sauce. Stir-fry until cooked through and add spring onions after turning off the heat.
  • STEP 3
    • Pre-heat the oven at 180 C.
  • STEP 4
    • Cut the puff pastry dough into rectangles. Fill them with the beef stuffing and cover with another sheet of puff pastry.
  • STEP 5
    • Brush the curry puffs with egg wash before baking in the oven for 15 - 20 min.
  • STEP 6
    • In a saucepan, bring the vinegar, water, sugar and salt to a boil. When everything has dissolved, set aside to cool down before adding the cucumbers and shallots.
  • STEP 7
    • Place the beef curry puffs on a serving dish with that homemade relish (A-jaad dipping).
